Nittra Foreman has been the Executive Chef at Papillon Restaurant for almost 40 years. She received her formal culinary education at Tante Marie, San Francisco; continuing training with Traci des Jadin of Rubicon, San Francisco; Suzette Grish of Acquerello, San Francisco; and Barbara Viqueora, Victor’s San Francisco. Ms. Foreman’s Asian background in the culinary arts gives dimension to her creativity. Her travel and studies in European culinary methods has enhanced her unique interpretation of contemporary culinary arts and use of quality local ingredients.
