We use a single origin rice and prominently display the farmer’s name on our label. We want people to know where our ingredients are sourced from.

Den Sake Brewery was established in February 2017 by Yoshihiro Sako. Sako is the head brewer (toji) and co-founder. He started his career working in the restaurant industry in San Francisco in 2004. He began as a wine and sake buyer for several restaurants, then later became a sake sommelier at Yuzuki Japanese Eatery in San Francisco. During his time as a sommelier, Sako also taught classes about sake for several years.

Before starting Den Sake, Sako apprenticed at several breweries in Japan to learn the craft of sake making.

Den’s philosophy is to make sake with a bright, refreshing acidity that can be enjoyed with Californian cuisine.
