Our founder, Aaron Barkenhagen, started brewing Bootlegger’s beers on his own. Every now and then he’d call in a favor from a friend or family member – but local demand grew and it was time to bring on a team. In April 2008, after over a year of construction, Bootlegger’s Brewery opened and sold its’ first keg to a well known neighborhood bar in Downtown Fullerton.

The Craft Beer market is expanding daily, and while many of these breweries have amazing products, their focus isn’t always on their consumers. At Bootlegger’s Brewery, our family first mentality has helped us shape the way we do business. As part of the OC community, Bootlegger’s Brewery is committed to ensuring that everyone who comes into one of our tasting rooms, buys a drink or tours our brewhouse becomes more than just a consumer. From the casual drinker to the die-hard fan, everyone who takes a sip from one of our beers becomes a member of our family.

Since 2006, Bootlegger’s Brewery founders Aaron and Patricia Barkenhagen have worked hard to ensure that our family enjoys the best quality craft beer the OC has to offer. With a well versed and knowledgeable staff, our team plays an important role in the growth of our brewery as a whole. With their immeasurable help we unite to provide amazing service and high-quality brews. This family mentality fosters a desire to bring newcomers into the fold, while welcoming back our regulars with open arms.

4worldlovers: A Modernized Yorkshire-Style Pale Ale brewed w/ Whole Cone Citra on Nitro

We’ve got some Hard Lemonade for sale! And look at that color! That beautiful, natural color comes from the use of an insane amount of lavender pods that we use to brew a ginormous, fresh batch of lavender tea, that then gets blended with our lemonade-style seltzer. It drinks pretty balanced, with the acidity and sweetness hitting at just the right level, and then a soft tannic hit of dryness from the lavender. Enjoy straight out of the can, or pour over ice. Also legit with a dram of Old Tom Gin.

We’ve been pretending to make Kölsch style beers for a while now, but it wasn’t until recently that my wife and I took a train to Cologne and got to experience those 0.2L rippers one glass at a time. Words and style guidelines fail to articulate the crispness and crushability factor that make these beers so different than others. So, here’s us going back to the drawing board on how we make these beers. A reversed engineered version of what I feel like I experienced in Cologne, aka a Kölschier Kölsch :)

Using all German ingredients, except for the water, each batch is another baby step towards recreating what we’ve experienced in Munich. Straw in color, with a subtly and nuance that is hard to describe and instead needs to be experienced! Notes of fresh baked bread, herbal tea, and puffed rice, create a beer style that is praised for it’s liter-worthy drinkability.

Our in-house German-American transplant (Ryan Barry) dug deep into some old German brewing books and found some inspiration from the yummy lagers made in Franconia. This one is Amber in color, and utilizes a wide range of the lovely @weyermann_speciatly_malts to create a malt profile of graham cracker, toffee, toasted biscuits, and multigrain pancakes. The finish is clean, balanced and infinitely quaffable.

Brewed with Pilsner malt and some of our favorite German hops, the result is medium-bodied with a soft malt presence and enough structured bitterness to create that snappiness that you hope for in a Pils. Tasting notes? The aromatics and flavor are full of herbal notes, with some fresh sage and white bread character that carries into the dry finish. Our most Italian version to date ?

Using raw wheat, pilsner malt, old fashioned oats, noble hops, and then fermented with a super yummo Belgian yeast. We finished it off with fresh ground coriander and some dried orange peel that we made ourselves by zesting and drying locally grown oranges. The result is a thirst quencher and definitely a reminder to us of how much we love this beer style! The spice and zest are present, but without trampling all over the expressive yeast.

Our West Coast IPA that celebrates the love that we have for our beloved mascot, Cheeky! Layered with the holy trinity of hops; Citra, Mosaic, and Simcoe for a radiantly clear IPA. We’ve been lucky enough to win a Silver at the 2018 World Beer Cup and a Silver at the 2019 Great American Beer Festival for this one.

Sniff & Sip. Burp. Repeat. This modern West Coast, with its lean body, its snappy bitterness, that dab of hoppy resin in the linger, and all those hoppy aromatics is all we need!! Well…that, and a good pally to enjoy it with! Flavor profile? Think Ruby Red grapefruit, navel oranges, and the Devil’s Lettuce in the linger.

The name Chihuahua serves as a metaphor for the mission of Chihuahua Cerveza, which celebrates the convergence of two great cultures; expressed through the lives of a new generation collectively coming together to share in a vibrant and contemporary Mexican American experience; all with the goal of making positive impacts in our communities.

The Water Brewery is a life changing establishment. I fell in love with the space and people the first day I entered through their doors.
